New varieties are delicious, nutritious and colourful

Dec. 5, 2014, Prosser, Wash. – U.S. Department of Agriculture (USDA) scientists have developed nutritious new potato varieties with red and purple flesh and skin.

As the USDA's Agricultural Research Service reports:

"All potatoes contain an assortment of nutrients and other health-promoting compounds, and the coloured-flesh potato varieties contain anthocyanins and carotenoids. The amount and type depend on the potato variety. These delicious—and colourful—new potatoes are now available to consumers."
